  • 1 teaspoon fresh lemon juice
  • 1 small clove garlic, finely minced (optional)

  • 1 tablespoon finely chopped chives or scallions (optional)
  • Pinch of freshly cracked black pepper

Instructions

  1. Soften the unsalted butter at room temperature for about 30 minutes until soft but not melting.
  2. If using garlic, finely mince or grate 1 small clove. Chop chives or scallions finely if using.
  3. In a medium bowl, combine the softened butter and 2 tablespoons white miso paste. Blend with a spatula or electric mixer until smooth and creamy, about 2-3 minutes.
  4. Stir in 1 teaspoon fresh lemon juice and 1/2 teaspoon toasted sesame oil until fully incorporated.
  5. Fold in the minced garlic and chopped chives if using, distributing evenly.
  6. Add a pinch of freshly cracked black pepper to taste and stir once more.
  7. Transfer the mixture onto plastic wrap, roll into a log shape, twist the ends tightly, and chill in the refrigerator for at least 1 hour to firm up and meld flavors.
  8. Slice off rounds to serve, spreading on warm bread, melting over steamed veggies, or dolloping onto grilled meats.

Notes

Use softened butter for best blending results. White miso provides a mild, sweet flavor; red miso can be used for a bolder taste. Chill the butter log for at least 1 hour to let flavors meld. Let sit at room temperature 10 minutes before serving if too firm. Store tightly wrapped in fridge up to 2 weeks or freeze up to 3 months.
