  • 1 teaspoon key lime zest
  • 1 cup heavy cream, cold
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Crush graham crackers finely using a food processor or rolling pin.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter until mixture resembles wet sand.
  3. Press mixture firmly and evenly into a 9×9-inch baking pan. Bake for 8-10 minutes until edges are golden. Let cool completely.
  4. In a large bowl, whisk sweetened condensed milk, fresh key lime juice, and zest until smooth and slightly thickened.
  5. In a chilled bowl, whip heavy cream with vanilla extract until soft peaks form.
  6. Gently fold whipped cream into lime mixture in three additions, keeping the mixture airy.
  7. Pour filling evenly over cooled crust and smooth the top. Cover tightly with plastic wrap and freeze for at least 4 hours or overnight until firm.
  8. Remove from freezer 10 minutes before serving to soften slightly. Use a sharp knife warmed in hot water and dried to slice cleanly.

Bake the crust before adding the filling to avoid sogginess. Chill mixing bowl and beaters before whipping cream for better volume. Fold whipped cream gently to maintain airy texture.
