  • 8 ounces cream cheese, softened
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped and lightly sautéed (optional)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about 1/2-inch thickness using a meat mallet or rolling pin between two sheets of plastic wrap or in a zip-top bag.
  3. In a mixing bowl, combine softened cream cheese, minced garlic, chopped spinach, grated Parmesan, Italian seasoning, salt, pepper, and red pepper flakes if using. Mix until creamy and uniform.
  4. Spoon about 3 tablespoons of the cream cheese mixture onto each flattened chicken breast. Fold the chicken over or roll it up to enclose the filling. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven or move the chicken breasts to a greased baking dish if the skillet is not oven-safe.
  7. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from oven and tent with foil for 5 minutes to let the juices redistribute.
  9. Slice carefully if desired and serve warm.

Notes

If the chicken browns too quickly in the oven, tent loosely with foil halfway through cooking. Soften cream cheese before mixing to avoid lumps. Use a meat thermometer to ensure chicken is cooked to 165°F. You can secure stuffed chicken with toothpicks if needed. For dairy-free version, use vegan cream cheese and nutritional yeast instead of Parmesan.
