  • 2 medium ripe avocados, peeled and pitted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • A pinch of sea salt
  • 23 tablespoons almond milk or any plant-based milk
  • Optional toppings: fresh berries, chopped nuts, shredded coconut, or a sprinkle of cinnamon

Instructions

  1. Cut 2 medium ripe avocados in half, remove the pits, and scoop the flesh into your food processor or blender bowl.
  2. Add 1/4 cup unsweetened cocoa powder and 1/4 cup maple syrup (or honey). Blend for about 30 seconds until combined.
  3. Pour in 1 teaspoon pure vanilla extract and a pinch of sea salt. Blend again for 15 seconds.
  4. Add 2 to 3 tablespoons almond milk to loosen the mousse. Blend until the texture is silky smooth, about 1 minute. Scrape down the sides with a spatula if needed.
  5. Taste and adjust sweetness or chocolate by adding more syrup or cocoa powder if desired, blending briefly after each addition.
  6. Spoon the mousse into serving bowls or glasses. Cover and refrigerate for at least 30 minutes to let the flavors meld and texture set.
  7. Before serving, garnish with fresh berries, nuts, or a sprinkle of cinnamon.

Notes

Use ripe avocados that yield slightly when pressed but are not mushy to avoid grainy texture. Sift cocoa powder if clumpy. Blend in stages for balanced flavor. Chill mousse for at least 30 minutes for best texture. Adjust sweetness gradually to avoid over-sweetening.
