A comforting Minnesota-style hotdish featuring a creamy ground beef and mushroom soup filling topped with crispy tater tots and melted cheddar cheese. Perfect for cozy weeknights or gatherings.

Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 32 oz frozen tater tots
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tablespoon Worcestershire sauce (optional)
  • Salt and pepper to taste
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat and brown the ground beef, breaking it apart with a spatula. When halfway browned, add diced onion and minced garlic. Cook until beef is fully browned and onions are translucent, about 7-8 minutes. Drain excess fat, leaving about a tablespoon for flavor.
  3. In a large bowl, combine the cooked beef mixture with cream of mushroom soup, sour cream, Worcestershire sauce, frozen mixed vegetables, and half of the shredded cheddar cheese. Season with salt and pepper and stir until well combined.
  4. Spread the beef mixture evenly in a 9×13 inch baking dish. Arrange frozen tater tots in a single layer over the top. Drizzle melted butter over the tater tots.
  5. Sprinkle the remaining cheddar cheese over the tater tots.
  6. Bake uncovered for 35-40 minutes until the tater tots are golden and crispy and the filling is bubbly. Tent loosely with foil if topping browns too fast.
  7. Let the hotdish rest for 5-10 minutes before serving to set and meld flavors.

Notes

Drain excess fat from beef but leave about a tablespoon for flavor. Use frozen mixed vegetables directly without thawing to avoid mushy filling. Drizzle melted butter over tater tots before baking for extra crispness. Avoid covering the dish during baking to keep topping crispy. Rest hotdish 5-10 minutes before serving. For gluten-free, verify soup and tater tots are gluten-free. Can prepare filling a day ahead and add topping before baking. Slow cooker adaptation possible.
