  • 8 oz (225 g) spaghetti or your favorite pasta
  • 4 tablespoons (56 g) unsalted butter
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced
  • Freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 8 oz (225 g) spaghetti and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve ½ cup (120 ml) pasta water before draining.
  2. While pasta cooks, heat a small dry skillet over medium heat. Add 2 tablespoons sesame seeds and stir frequently until golden brown and fragrant, about 2-3 minutes. Remove from heat and set aside.
  3. In a large skillet over medium heat, melt 4 tablespoons (56 g) unsalted butter. Add 2 cloves minced garlic and sauté gently until fragrant, about 30 seconds to 1 minute, avoiding browning.
  4. Pour in 3 tablespoons soy sauce and 1 teaspoon sesame oil if using. Stir to combine and let simmer for 1-2 minutes. Add reserved pasta water as needed to loosen the sauce.
  5. Add drained pasta to the skillet and toss thoroughly to coat every strand in the sauce. Add pasta water a tablespoon at a time if needed for perfect sauce consistency.
  6. Remove from heat. Stir in sliced green onions and freshly ground black pepper to taste. Sprinkle toasted sesame seeds on top. Add a pinch of red pepper flakes if desired.
  7. Serve immediately while warm. Garnish with extra green onions or a drizzle of sesame oil if desired.

Notes

Do not overcook pasta; al dente is best. Reserve pasta water to adjust sauce consistency. Melt butter over medium or medium-low heat to avoid burning. Toast sesame seeds carefully to prevent bitterness. Adjust soy sauce to taste. Adding green onions at the end keeps them fresh and crisp.
