  • 2 large hard-boiled eggs, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces elbow macaroni and cook according to package instructions, about 7-8 minutes, until al dente. Stir occasionally.
  2. Drain the macaroni in a colander and rinse under cold water to stop cooking and cool the pasta.
  3. In a large mixing bowl, whisk together 1 cup mayonnaise, 1 tablespoon apple cider vinegar, 1 teaspoon Dijon mustard, and 1 teaspoon sugar until smooth. Season with salt and pepper to taste.
  4. Finely dice 2 celery stalks, chop 1/4 cup red onion, and chop 2 hard-boiled eggs.
  5. Add the cooled macaroni, celery, onion, and eggs to the dressing. Gently fold until evenly coated, being careful not to break up the eggs too much.
  6. Taste and adjust seasoning with more salt, pepper, or vinegar if desired. Optionally add chopped pickles or pickle juice.
  7. Cover and refrigerate for at least 1 hour, ideally 2-3 hours, to let flavors meld before serving.
