  • 1 cup mixed vegetables (carrots, peas, and corn; fresh or frozen)
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce (recommend Kikkoman)
  • 1 tablespoon sesame oil
  • Green onions, sliced (for garnish)
  • Optional: cooked shrimp, chicken, or tofu for protein
  • For the Creamy Yum Yum Sauce:
  • 1/2 cup mayonnaise (preferably Hellmann’s)
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sugar
  • 12 tablespoons water (to thin sauce)

Instructions

  1. Prep your ingredients: chop onion and garlic finely; thaw and drain frozen veggies if using; beat eggs lightly; mix all yum yum sauce ingredients until smooth, adding water to desired consistency; set sauce aside.
  2. Preheat the Blackstone griddle over medium-high heat for 3-5 minutes. Add 1 tablespoon vegetable oil and heat until a drop of water sizzles on contact.
  3. Sauté garlic and onions on the griddle, stirring constantly until fragrant and translucent, about 5 minutes. Add mixed vegetables and cook until warmed through and slightly caramelized.
  4. Push veggies to the side and pour in beaten eggs. Let set briefly, then scramble gently until just cooked but still moist. Mix eggs with veggies.
  5. Add remaining vegetable oil and cooked rice. Break up clumps and stir constantly to heat evenly. Drizzle soy sauce and sesame oil over rice and mix well. Keep heat high enough for toasty bits but avoid burning.
  6. Taste and adjust seasoning if needed. Transfer to plates, garnish with sliced green onions, and drizzle generously with creamy yum yum sauce.

Notes

Use day-old rice for best texture; freshly cooked rice should be cooled on a tray before frying. Avoid overcrowding the pan to ensure even cooking. Add eggs last to prevent overcooking. Drizzle yum yum sauce just before serving to maintain its fresh tang. For gluten-free, substitute soy sauce with tamari and use gluten-free mayo and ketchup. Vegan adaptations include vegan mayo and scrambled tofu instead of eggs.
